Roasted Tomato Basil and Grilled Bacon Blue Cheese Sandwiches


  • 4 Slices Whole Grain Bread
  • 2 Tbsp. Butter
  • 4 oz. Blue Cheese Crumbles
  • 2 Strips Crispy Bacon, crumbled
  • 24 oz. Boulder Organic Roasted Tomato Basil Soup


  1. Heat the griddle to 325 degrees.
  2. Butter one side of each slice of bread.
  3. In a small bowl, combine the blue cheese and bacon crumbles.
  4. Place two slices of bread onto the griddle, buttered side down. Divide the blue cheese mixture onto each.
  5. Place the remaining slices of bread on top of the blue cheese mixture, buttered side up.
  6. Once the bottom slices are golden, flip the sandwiches to cook the other sides.
  7. Serve with warm bowls of Boulder Organic Roasted Tomato Basil Soup.
