Looking for a new way to turn soup into a hearty meal? Roasting cauliflower transforms it from a crunchy, slightly boring veggie, to a succulent and juicy dish! Add some bacon to the mix and our creamy Butternut Squash Soup with Sage transforms into an even more flavorful dish that is sure to fill your appetite!
1 tub Boulder Organic Butternut Squash Soup with Sage
2-2 slices bacon
4-5 pieces organic cauliflower
Salt & pepper
Break apart a head of cauliflower, toss in olive oil and salt/pepper and roast in a baking dish at 400 degrees for 20 minutes or until tender. While the cauliflower is roasting, heat up some Butternut Squash Soup with Sage soup and crisp some bacon. When the cauliflower is hot out of the oven, nestle a few pieces in each bowl of soup and crumble bacon over the top.
