Potato Leek Soup and Frisee Salad with Warm Bacon and Egg

Ingredients:

Directions:

  1. Cut the bacon slices crosswise into 1/4-inch pieces.
  2. Cook the bacon in a skillet until just brown. Remove the bacon from the skillet and set aside in a bowl.
  3. Whisk together the red wine vinegar and Dijon. Set aside.
  4. Add the minced shallot to the hot bacon grease and cook for 1 minute, before whisking in the vinegar and Dijon emulsion.
  5. Add the bacon back to the skillet and remove from heat.
  6. Tear the frisée onto four salad plates.
  7. Drizzle the bacon and dressing onto the frisée with a spoon and finish with poached or soft-boiled eggs. Season to taste.
  8. Serve immediately with sliced baguette, alongside warm bowls of Potato Leek Soup.
