Chicken Vegetable Chili with Sweet Corn “Dumplings”



  1. Preheat the oven to 375F and prepare an 8 x 6 baking dish with butter.
  2. Over medium heat, melt the butter in a saucepan. Sauté the onions until tender.
  3. Add the milk and corn to the sauté. Season with salt and pepper and heat to just below a simmer.
  4. Add the cornmeal and whisk constantly until thick. Remove from heat and allow to cool slightly.
  5. Whisking, add the cornmeal to the milk mixture and reduce heat. Allow the mixture to thicken. Remove from the heat and allow to cool slightly.
  6. Gradually whisk the cooled cornmeal mixture into a medium bowl with the egg yolk.
  7. In a separate bowl, beat the egg whites until just stiffened.
  8. Slowly incorporate the egg whites into the cornmeal mixture.
  9. Pour the batter into the prepared baking dish and bake for about 25-30 minutes, until the top is firm and browned, and cracks are beginning to form.
  10. Remove the dish from the oven and allow to cool slightly.
  11. Heat the Vegetable Chili according to package directions and ladle into serving bowls.
  12. Using a large spoon or ice cream scoop, form dumplings and place on top the Vegetable Chili. Garnish with sweet corn as desired.
